Apple-Spiced Porridge

By soaking the oats the night before, you’ll shave off at least 20 minutes from the cooking time so you can enjoy this hot comfort food in just minutes.
Prep Time: 10 minutes
Cooking Time: 9-12 minutes
Standing Time: 10-12 hours
Yield: 2 servings
Ingredients:
11⁄3 cups water
1⁄3 cup steel-cut oats
½ cup chopped apple
½ teaspoon apple pie spice blend or ground cinnamon
¼ teaspoon salt
¼ cup fat-free or
1% lowfat milk
1 teaspoon packed Splenda® Brown Sugar Blend or brown sugar
2 teaspoons chopped toasted pecans or walnuts (optional)
Preparation:
- The night before, bring water to boil in small saucepan. Remove from heat; stir in oats. Cover and let stand for 10 to 12 hours or overnight.
- In the morning, stir in apple, apple pie spice and salt. Bring mixture to a gentle simmer. Reduce heat to medium-low or low and very gently simmer, uncovered, for 9 to 12 minutes or to desired consistency, stirring occasionally.
- To serve, spoon porridge into bowls. Pour 2 tablespoons milk over each serving. Sprinkle with brown sugar blend and, if desired, nuts.
