Citrus Salsa and Corn Chips

Fresh grapefruit and oranges mix with tomato and cucumber in this vitamin-packed holiday appetizer.

Yield: 8 servings

½ cup coarsely chopped grapefruit sections
½ cup coarsely chopped orange sections
½ cup seeded and chopped tomato
½ cup coarsely chopped cucumber
2 tablespoons sliced
green onion
2 tablespoons seeded and finely chopped fresh jalapeño pepper
1 tablespoon frozen
orange juice concentrate, thawed
32 baked tortilla chips (about 2½ cups)


  1. In medium bowl toss together grapefruit sections, orange sections,tomato, cucumber, onion, jalapeño pepper and orange juice concentrate.
  2. Transfer to serving bowl. Serve with tortilla chips.
