Grilled Fruit Dippers

Enjoy almost any summer fruit hot off the grill. Use firm fruits, as softer fruits can turn mushy. Serve the fruit kabobs with this creamy, low-sugar dip, or on top of frozen vanilla yogurt.

Prep Time: 30 minutes
Grilling Time: 2-3 minutes
Yield: 8 servings

Ingredients:
Dippers
8 4-inch bamboo skewers
8 medium strawberries
8 1-inch cubes fresh pineapple
8 1-inch wedges nectarine
8 1-inch chunks peeled kiwi fruit

Creamy Vanilla Dip
1 8-ounce container vanilla-flavored light yogurt
1 snack-size vanilla-flavored, sugar-free refrigerated pudding (about 106 g or 3¾ ounces)
½ teaspoon vanilla extract (optional)

Preparation:

  1. At least 30 minutes before grilling, soak bamboo skewers in water.
  2. Preheat gas grill to medium for direct grilling. Alternately thread different fruits on bamboo skewers, leaving 1⁄4 inch between pieces.
  3. Grill fruit, uncovered, for 2 to 3 minutes or until heated through, turning occasionally. Serve with small individual cups of Creamy Vanilla Dip.

Creamy Vanilla Dip

  1. Combine all ingredients in small bowl. If desired, cover and refrigerate for up to 1 day. Makes about 1 cup.
