How to Make Yummy Garbanzo Bean Flour Muffins

They’re delicious – really. And high in protein and fiber.

Mari Ruddy, health, wellness and fitness blogger, just shared one of her favorite recipes with the Type 2 Nation community. These gluten-free muffins call for garbanzo bean flour (aka chickpea flour), which is high in fiber, protein, and folate and low in calories. Besides being a delicious baked good, the soluble fiber found in this garbanzo bean flour can help a bit in blood sugar regulation.
