Homemade Maple-Orange Granola

Made with egg whites instead of oil and sugar-free maple-flavored syrup instead of sugar, this granola makes a great breakfast or a crunchy topping for frozen yogurt or baked fruit.

Ingredients
Nonstick cooking spray
3 cups old-fashioned rolled oats
½ cup steel-cut oats or
¼ cup old-fashioned rolled oats
½ cup coarsely chopped walnuts or pecans
¼ cup wheat germ
2⁄3 cup sugar-free maple-flavored syrup
6 tablespoons packed Splenda® Brown Sugar Blend
2 egg whites
2 teaspoons vanilla extract
1½ teaspoons imitation maple flavoring
½ teaspoon ground cinnamon
½ teaspoon grated orange peel
1⁄8 teaspoon salt

Preparation

  1. Preheat oven to 325° F. Line baking sheet with foil; generously coat with non­stick spray. Combine old-fashioned and steel-cut oats, nuts and wheat germ in large bowl.
  2. Combine syrup and 3 tablespoons brown sugar blend in heavy small saucepan. Heat over medium-low heat just until sugar blend is melted. Transfer syrup mixture to small bowl; cool to room temperature.
  3. Whisk egg whites into syrup mixture. Stir in remaining brown sugar blend, vanilla extract, maple flavoring, cinnamon, orange peel and salt. Pour syrup mixture over oat mixture; toss until evenly coated.
  4. Spread oat mixture evenly on baking sheet. Bake for 40 to 45 minutes, stirring every 15 minutes or until dry. Cool on baking sheet on wire rack, stirring occasionally.
